Mackerel simmered in honey and miso

Ingredients (for 2 people)
- Mackerel
1 fish (cut into 3 pieces)
- Sliced ginger

- Dashi stock【A】
100cc
- Liquor【A】
100cc
- sweet sake【A】
大さじ1
- honey【A】
大さじ3
- soy sauce【A】
1 teaspoon
- miso【A】
2 to 3 tablespoons
How to make it
1Cut the mackerel into bite-sized pieces, and make cuts in the thickest parts with a knife.
Sprinkle lightly with salt (not included in the recipe) and let sit for a while, then pour boiling water over it to make marbled.
2In a deep frying pan【A】Add the sliced ginger and bring to a boil, then add ① so that it does not overlap, cover with a lid, and simmer over medium-low heat for about 10 minutes.
3Remove the lid and slowly simmer while pouring the broth over the mackerel with a spoon.
When the broth becomes thick and glossy, turn off the heat, serve in a serving dish and pour the broth over it. Garnish with lightly boiled spinach or green onions, if desired.
