Yuzu & Honey ohagi (botamochi)

Ingredients (Serves 4-5)
- Azuki beans (large natto)
250g
- Sugar or granulated sugar
230~250g
- Yuzu & Honey
50g
- salt

How to make it
1Put the azuki beans in a pot, add water so that the water level is about 3cm above the beans, put on high heat, and once it boils, drain in a colander. Repeat this process twice.
2Put the azuki beans and 1 liter of water in a pot and bring to a boil over high heat. Once boiling, reduce heat to low and simmer for about an hour, skimming off any scum. If the azuki beans rise above the water surface during the process, add more water.
3When the azuki beans are soft, separate the boiling water from the azuki beans. Put the azuki beans and sugar in a pot and simmer over low heat for about 20 minutes. Add the boiling water and simmer for another 15 minutes, then add Yuzu & Honey and simmer for about 5 minutes. Add a little salt to taste.
4Spread it out on a tray or similar to let it cool, then wrap it in dumplings made from glutinous rice or similar.
