Chicken meatballs and burdock root in miso ginger hotpot

Ingredients (for 2 people)
- Minced chicken: 350g
Green onion: 1
- Burdock (Sasagaki): 1/2 stalk
Onion: 1/2
- Water: 900cc
Chicken stock powder: 2 tablespoons
- Miso: 50g
Ginger Pickled in Honey syrup: 1 tablespoon
- Ground sesame seeds: 1 tablespoon
[A] Ginger Pickled in Honey (chopped): 20g
- [A] Grated ginger: 10g
[A] Potato starch: 1 tablespoon
- [A] Salt: 1/2 teaspoon
How to make it
1Cut the spring onions diagonally into 5mm pieces. Finely chop the onion.
2Add the ground chicken, onion, and (A) to a bowl and mix well until sticky.
3Put water and chicken stock powder in a pot and heat. When it boils, add miso, syrup from Ginger Pickled in Honey ginger, ground sesame seeds, and burdock. Add ② while rolling it into balls and simmer for about 10 minutes.
4Once the ingredients are cooked, add the green onions and simmer briefly.

You can add mushrooms if you like. If the soup thickens, add water.
