How to make it
1Roughly chop Ginger Pickled in Honey ginger and bacon.
2Heat 1 tablespoon of Salad oil in a frying pan and add the beaten eggs. Stir vigorously while cooking, then remove from the frying pan when the eggs are half-cooked.
3Heat 1 tablespoon of Salad oil in the frying pan, add the bacon and Ginger Pickled in Honey ginger, and stir fry. When the oil is mixed in, add the warm rice and quickly stir fry the whole thing, pressing with a spatula to remove the moisture.
4Put the eggs back into the pot and add the spring onions. Season with soy sauce, salt and pepper, and finish by drizzling sesame oil over the top.
5Tips
The trick to making it fluffy is to use hot rice. If you use cold rice, make sure to warm it up thoroughly in the microwave. Fried rice is all about speed. Work quickly and finish cooking before the temperature of the frying pan drops.
