Homemade ginger ale syrup made with Ginger Pickled in Honey

Ingredients (for 2 people)
- 200g ginger
200ml water
- 1 stick cinnamon
5 grains of black pepper
- Ginger Pickled in Honey (including ginger) 200g
Lemon & Honey 50g
How to make it
1Wash the ginger carefully with a scrubbing brush and cut it into thin slices 2 mm wide with the skin still on.
2Place all ingredients in a pot and place over medium heat.
Once boiling, reduce heat to low and simmer for 15 minutes then turn off heat.
3②Strain through a colander to remove rough heat.
4Mix 50ml of homemade ginger ale syrup with 150ml of carbonated water.

If you like it spicy, you can add deseeded chili peppers at step 2 and simmer.
