Simmered yellowtail with ginger

Ingredients (for 2 people)
- Yellowtail
2 pieces
- Ginger Pickled in Honey [A]

- Soy sauce [A]
大さじ4
- Mirin [A]
大さじ2
- Alcohol [A]
大さじ5
- Dashi stock [A]

How to make it
1Wash the yellowtail in salt water and wipe off the water.
2Combine the broth ingredients (A) in a large pot and bring to a boil. Place the yellowtail in a line, making sure they do not overlap. Cover with a paper lid, skim off any scum, and simmer while swirling the broth around until the broth is reduced to about 1/3 its original volume.
3Turn off the heat, let it cool and infuse the flavours.
